Easy Fried Rice

I absolutely love fried rice, and this recipe goes perfectly as a side with Baked Sweet and Sour Chicken.  It takes only a few minutes to make, just have some white rice prepared in advance!  This fabulous recipe comes from HERE.

Follow along as I show you how to make this easy fried rice...


Fried Rice
3 cups cooked white rice (day old or leftover works great)
3 tbsp sesame oil
1 cup frozen peas and carrots (thawed)
1 small onion, chopped
2 tsp minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce

Heat the oil in a large skillet or wok over medium high heat. Add the peas, carrots, onion and garlic. Saute until tender. 
 Move veggies to one side, lower heat to medium low, and add the egg to the empty side of the skillet.
 Cook until eggs are scrambled and cooked.
 Add the rice and soy sauce and stir well.
 Saute until heated through.
 Enjoy!
