Hamburger Cookies (Fudge Filled Tea Cookies)

This is another Christmas favorite of my family.  My grandma would make these every year!  They are a soft tea cookie filled with delicious fudge.  And they look like cute little hamburgers.  Does it get any cuter than that? 


Follow along as I show you how to make these tasty treats:


Hamburger Cookies
*Recipe from Grandma (Betty Hall)
1 3/4 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter or shortening
3/4 cup sugar
3 eggs
2 tablespoons milk
1 teaspoon vanilla

Fudge Filling
1 cup sugar
1/4 cup margarine
1/4 cup milk
1/2 teaspoon vanilla
1/2 cup milk chocolate chips

For the cookies, combine the flour, baking powder and salt.  Meanwhile cream the butter or shortening, gradually add sugar.  Cream until light and fluffy.  Blend in eggs one at a time, beating 1 minute each.  Add milk and vanilla, mix.  Blend in the dry ingredients and mix well.
Drop by teaspoonfuls onto greased baking sheets.  Bake at 350 degrees for 8 to 10 minutes.  Cool on wire racks.
Move cooled cookies to parchment or waxed paper.
To prepare the fudge, combine in a saucepan over medium heat the sugar, margarine, milk and vanilla.  Bring to a boiling and boil for one minute.  Remove from heat and stir in chocolate chips until chips are melted.  Allow to cool to thicken (you can cool in fridge to speed up cooling).
Spread frosting between two cookies sandwich style.
