Taco Soup

This soup is easy peazy lemon squeezy!  You can throw it together in minutes and you just let it simmer until dinner time.  Oh, and it tastes fantastic!  This is one of my favorite soups.

Just make sure you have a can opener for this one, cause we really are going easy!  Follow along and I'll show you how to make this taco flavored soup:


Taco Soup
1 pound ground beef
1 onion, chopped
1 packet taco seasoning
1 can (14 1/2 ounce) kidney beans, rinsed and drained
1 can (14 1/2 ounce) black beans, rinsed and drained
1 1/2 cups corn (frozen or one 14 1/2 ounce can)
2 cans (15 ounces) diced tomatoes, undrained
1 can (15 ounces) tomato sauce
2 cups water
Corn chips (optional)
Cheddar cheese, shredded (optional)

In a large soup pan, add the ground beef and onion and cook until meat is browned.  Drain excess liquid.
Add all remaining ingredients EXCEPT for the chips and cheese.  Bring to a boil, reduce heat, cover and simmer 30-40 minutes.
Serve soup topped with corn chips and cheese if desired.  Enjoy!
