Ham Tetrazzini

I frequently like to make my favorite Chicken Tetrazzini for dinner, but when I saw this simpler version of a tetrazzini made with ham, I had to try it.  This tasty dish was simple to put together and had the tetrazzini flavor I was looking for.

Pasta Carbonara

Sometimes I don't like to mess with main courses plus sides and a whole slew of dishes.  From time to time I like to make one large dish that serves as the entire meal with no sides needed.  Quite often a all encompassing meal will mean your sacrificing something, like health, or taste.  Both of which I'm not interested in giving up. 

 I found this tasty, light and easy pasta dish that is the healthy version of an all-time favorite to many.  Curl up with a bowl of this pasta for dinner or a quick and different lunch.  Give this one a shot.  It may become a regular.

Lasagna

When my husband and I first got married I was no pro in the kitchen.  I was desperate to find a recipe that would impress my husband but be easy enough for a beginner cook.  It can be frightening to make something new, using techniques you've never used before, and hope that it turns out right.  Well, this lasagna was one of the first REAL meals I ever made after being married.  Over the years I have tweaked the recipe slightly and I am very proud to introduce you to my go-to comfort lasagna that the whole family will eat!

Pasta Da Vinci (Cheesecake Factory Copycat)


My husband is the type who finds something he likes at a restaurant and orders that same dish every single time.  He had the idea for me to learn to make his all time favorite, Pasta Da Vinci from the Cheesecake Factory.  I did some research and found a recipe that was amazing!  According to my husband, it tasted very similar to the original, but he did give me some tips to really nail it next time... and there WILL be a next time.  Here's what you'll need and how to make it:

Spinach and Artichoke Mac 'N' Cheese

I love spinach and artichoke dip, and I love mac 'n' cheese, so I knew this had to be good.  The combination of spinach, artichokes, and fresh Italian Fontina and Parmigiano-Reggiano cheeses were very complimentary.  I loved the new flavor of this dish that doubles as a vegetarian meal.

Chicken Parmesan

I had never made Chicken Parmesan before yesterday, and now I am saving this recipe to make again.  The whole family gobbled it right up.  The homemade sauce was perfectly seasoned and complimented the chicken well.

Chicken Fettuccine and Biscuit Pull-Aparts


I've been looking for a good homemade Alfredo sauce, since I typically just buy the pre-made jars, and I thought this one was pretty tasty.  It was easy to make and came together nicely.  I also love making these cute little pull-aparts with dinner.  They take just minutes to make and the kids love them!  The recipe for the Alfredo sauce came from a "Cooking Light" cookbook that I have, and the biscuit recipe came from a family member a few years ago.  Here's the recipes...

Easy Pasta Night!

So, tonight is the kind of night where cooking something new just sounds like too much work.  It's been the kind of day where my daughter has lost her art supplies, Nintendo DS, and lava lamp (due to attitude) and still tells me "no I won't do it" when I ask her to clean her room.  Not my favorite words.  So, being busy with that and having not made my list of meals for the next week, nor have I gone grocery shopping, I decided to make something easy that I already have ingredients for.  Spaghetti!!  Lets just say that Prego is my best friend tonight!
